  • 2 lbs beef chuck, cut into 1.5-inch cubes
  • Salt and freshly ground black pepper, to taste
  • 1 large yellow onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 tablespoon tomato paste
  • 1 can (14 oz) diced tomatoes
  • 1 cup dry apple vinegar
  • 1 cup beef stock
  • 1 tablespoon fresh rosemary, chopped (or 1 tsp dried)

Instructions

  1. Prepare all ingredients by chopping vegetables and cutting beef into cubes.
  2. In a large Dutch oven over medium-high heat, heat olive oil and sear beef cubes until browned on all sides (about 5-7 minutes). Season with salt and pepper.
  3. Remove the browned beef from the pot and sauté onions and garlic until soft (about 3-4 minutes).
  4. Add carrots and celery; stir well before adding tomato paste for another minute of cooking.
  5. Return beef to the pot along with diced tomatoes, apple vinegar, and beef stock.
  6. Stir in fresh rosemary (or dried), bring to a boil, then reduce heat to low. Cover and simmer for about 2 hours until beef is tender.
