  • 1 lb ground beef (or ground turkey)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 1 can (15 oz) diced tomatoes
  • 1 can (4 oz) diced green chilies
  • 1 cup beef or chicken broth
  • 1 packet taco seasoning
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Optional toppings: sour cream, shredded cheddar cheese, chopped cilantro, tortilla chips, sliced avocado

Instructions

  1. In a large skillet over medium-high heat, brown the ground beef until fully cooked. Drain excess fat.
  2. Sauté chopped onion and minced garlic in the same skillet for 2-3 minutes until softened.
  3. Transfer the beef mixture to your slow cooker. Add black beans, corn, diced tomatoes, green chilies, taco seasoning, chili powder, cumin, smoked paprika, salt, pepper, and broth. Stir well.
  4. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours.
  5. Before serving, taste and adjust seasoning if necessary. Serve hot with desired toppings.
