  • 1 salmon fillet (150-180g)
  • 2 medium potatoes
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 tsp olive oil or butter
  • Salt & pepper, to taste
  • 1 tbsp butter
  • 2 tbsp milk (or cream, for extra richness)

Instructions

  1. Season the salmon fillet with salt and pepper. Heat olive oil or butter in a non-stick skillet over medium heat, then cook the salmon for 3-4 minutes on each side until cooked through.
  2. Boil diced potatoes in salted water for 12-15 minutes until fork-tender. Drain and mash them with butter and milk, adding salt to taste.
  3. In a pot with boiling water, steam carrots for 5-6 minutes, then add broccoli for an additional 4-5 minutes until bright green.
  4. Plate the salmon alongside the mashed potatoes, steamed carrots, and broccoli.
