1 salmon fillet (150-180g)
2 medium potatoes
1 cup broccoli florets
1 cup sliced carrots
1 tsp olive oil or butter
Salt & pepper, to taste
1 tbsp butter
2 tbsp milk (or cream, for extra richness)
Instructions
Season the salmon fillet with salt and pepper. Heat olive oil or butter in a non-stick skillet over medium heat, then cook the salmon for 3-4 minutes on each side until cooked through.
Boil diced potatoes in salted water for 12-15 minutes until fork-tender. Drain and mash them with butter and milk, adding salt to taste.
In a pot with boiling water, steam carrots for 5-6 minutes, then add broccoli for an additional 4-5 minutes until bright green.
