  • 1/4 cup breadcrumbs
  • 1 large egg
  • 1 tablespoon chopped fresh parsley

  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon ground allspice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups diced pumpkin or butternut squash
  • 1 tablespoon olive oil
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • Salt and pepper, to taste
  • 1 can (15 ounces) crushed tomatoes
  • 1 tablespoon tomato paste
  • 1/2 cup chicken or vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1 teaspoon honey or maple syrup
  • 2 tablespoons olive oil
  • 1/2 cup plain Greek yogurt (optional)
  • Fresh parsley or cilantro, chopped (optional)
  • Toasted pine nuts or pumpkin seeds (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. In a bowl, mix ground meat, grated onion, garlic, breadcrumbs, egg, parsley, and spices until well blended. Shape into oval patties.
  3. Toss diced pumpkin with olive oil and spices; spread in the baking dish.
  4. Sear kofta patties in a skillet until browned but not cooked through, then set aside.
  5. In the same skillet, combine crushed tomatoes, tomato paste, broth, cumin, coriander, and honey; simmer briefly.
