  • 2 cups granulated sugar
  • 3/4 cup water
  • 1/2 cup liquid glucose or light corn syrup
  • few drops black gel food coloring
  • 6 Granny Smith apples (or 12 small apples)

Instructions

  1. Prepare a greased baking sheet lined with parchment paper.
  2. Skewer each apple with bamboo sticks and set aside.
  3. In a medium saucepan, combine sugar, water, corn syrup, and black food coloring over medium heat.
  4. Stir until the sugar dissolves completely, then stop stirring and wash down the sides of the pot with a wet brush to prevent crystallization.
  5. Cook until the mixture reaches hard crack stage (150ºC/310ºF).
  6. Dip each apple into the caramel mixture, ensuring even coverage.
  7. Place dipped apples on the prepared baking sheet to cool completely before serving.
