  • 4 small sugar pumpkins
  • 1 tablespoon olive oil
  • 1 cup pizza sauce
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ½ cup turkey pepperoni
  • ½ cup diced bell peppers
  • ¼ cup sliced black olives
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried oregano
  • ½ teaspoon garlic powder

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Carefully slice the tops off the pumpkins and scoop out the seeds. Brush insides with olive oil and season with salt and pepper.
  3. Place pumpkins on the baking sheet and roast for about 20–25 minutes until slightly softened.
  4. In a bowl, mix pizza sauce, half the mozzarella, Parmesan, turkey pepperoni, bell peppers, olives, oregano, and garlic powder.
  5. Stuff each pumpkin with the filling and top with remaining mozzarella cheese.
  6. Bake for an additional 15–20 minutes until cheese is bubbly and golden.
