  2. Peel the carrots and slice them into thin coins (1/8-1/4 inches thick).
  3. Wash the beets thoroughly, remove both ends, and slice them thinly (1/8-1/4 inches thick).
  4. In a large mixing bowl, combine the sliced vegetables with maple syrup, avocado oil, cinnamon, and sea salt. Mix until well-coated.
  5. Spread the seasoned veggies evenly on a baking sheet.
  6. Roast in the oven for 40-45 minutes, rotating halfway through until tender.
