  • 3 pounds roma or plum tomatoes, cut in half
  • 8 cloves garlic, peeled
  • 3 tablespoons olive oil
  • 2 yellow onions, thinly sliced
  • ½ cup packed basil leaves
  • ½ teaspoon dried oregano
  • 12 cups water or vegetarian broth, depending on thickness
  • Freshly ground salt and pepper, to taste
  • Light/Regular coconut milk, for a creamy vegan soup (optional)
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Place halved tomatoes and garlic on the sheet, drizzle with olive oil, and season with salt and pepper. Roast for 40-45 minutes until caramelized.
  2. In a large pot, heat olive oil over medium heat. Add sliced onions and cook until golden brown, stirring occasionally (about 20 minutes).
  3. Allow roasted tomatoes and garlic to cool slightly before transferring them to a food processor with basil leaves and caramelized onions. Blend until smooth.
  4. Return the mixture to the pot over medium-low heat. Stir in dried oregano, vegetarian broth (or water), and adjust seasoning with salt and pepper to taste. Simmer for about 10 minutes before serving.
