Instructions

  1. Preheat your oven to 350°F and line a muffin tin with cupcake liners.
  2. In a stand mixer, combine flour, sugar, baking powder, and salt.
  3. Add plant butter and canola oil until crumbly.
  4. Incorporate eggs one at a time, mixing well after each addition.

  8. Fill the cupcake liners about ¾ full with batter.
