  • 1 cup pumpkin puree
  • 1 1/2 cups heavy whipping cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground sage
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon brown sugar
  • 1/2 cup Parmesan cheese (freshly grated, plus extra for serving)

Instructions

  1. Cook 8 ounces of rigatoni pasta in a large pot of boiling water until al dente; drain.
  2. In a skillet over medium heat, melt 3 tablespoons of butter and sauté 1/2 diced yellow onion and optional red pepper flakes for 5-7 minutes until translucent. Add 3 minced garlic cloves and cook for an additional minute.
  3. Stir in 1 cup of pumpkin puree followed by 1.5 cups of heavy whipping cream. Whisk until combined.
  4. Season with 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1/4 teaspoon ground sage, 1/8 teaspoon nutmeg, and 1 teaspoon brown sugar; let simmer for about 2-3 minutes.
  5. Mix in 1/2 cup freshly grated Parmesan cheese until melted into the sauce.
