  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 3 large eggs
  • 2 tablespoons all-purpose flour
  • 2 teaspoons vanilla extract
  • 2 tablespoons instant espresso powder dissolved in 1 tablespoon hot water
  • 1/4 cup heavy cream
  • Whipped cream (optional)
  • Chocolate shavings (optional)

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press into the bottom of a springform pan and bake for 10 minutes.
  3. In another bowl, beat cream cheese and sugar until smooth. Add sour cream and mix well.
  4. Incorporate eggs one at a time followed by flour, vanilla extract, espresso mixture, and heavy cream.
  5. Pour filling over crust and bake for approximately 55 minutes or until set but slightly jiggly in the center.
  6. Let cool in the oven with the door ajar for one hour before refrigerating for at least five hours or overnight.
